30-Day Vegan Challenge
So here’s the scoop. My hubs and I have been doing some soul searching (and documentary watching) recently regarding practices around the food we consume on a daily basis and the benefits of a vegan diet, and frankly, we were shocked. Without going into too much detail, I will leave it to you to learn a little yourself by watching documentaries like, Forks over Knives, Vegucated, and Food inc (they are all on Netflix, so no excuses).
Long story short, I want to be the healthiest version of myself that I can be and a better influence for eating for my family! PLUS, we all need a healthy detox now and again, so why not? That’s why we’ve decided to eat a whole food, plant based diet for 30 days and see how we feel at the end! I mean, if Beyoncé does it, then count me in. We bought the Thug Kitchen cookbook and the recipes are phenomenal (and fairly simple) and so far I am LOVING it. Like, seriously, I could see this becoming a lifestyle change for the long run. As much as I thought I would hate it, I’ve enjoyed spending more time in the kitchen learning how to cook healthy meals and I honestly feel better.
It’s only been a week, but so far, so good. Perhaps even more shocking, I don’t miss the things I thought I would DEFINITELY miss, like cheese! When I was researching I read about how I would always be hungry and craving things in the beginning but I honestly feel great. I keep healthy snacks like nuts, dried fruit, and little salads at arms reach so I can always have a snack and I make sure I have protein in every meal so I’ve not really struggled (yet)! I will keep you updated!
This week alone I’ve eaten lasagna, spicy sriracha cauliflower bites, chinese noodles with blanched kale and peanut sauce, burritos with guacamole, beans, veggies and Spanish rice, mango curry and naan bread, and some bangin’ granola bars! I literally have spent so much time in the kitchen really learning how to cook which has been an adventure! Even Hudson has been enjoying the food which is my biggest win because we struggle to get him to eat his veggies!
